There’s nothing quite like whipping up a loaf of homemade zucchini bread, slathering it with butter, and sitting down to enjoy it around the table with family and friends. I remember doing just that every summer of my childhood when my mom would make this exact recipe with ripe zucchinis. This time around, we were lucky enough to have a massive garden-grown zucchini from our employee’s garden and we munched on this loaf during our weekly team meeting. It’s been a favorite of my family’s for so long, I’m excited to finally share it with the Lime Ricki team – and you! If you bake often, you should already have all the necessary ingredients – just head to your local farmer’s market to grab a fresh zucchini. Turn on your current favorite album, audiobook or podcast, slip on a cute apron, and get to baking!

Ingredients

• 1 cup sugar
• 1 cup brown sugar
• 3 eggs
• 1 cup oil
• 2 cups grated zucchini
• 3 tsp vanilla
• 3 cups flour
• 1 tsp salt
• 1 tsp baking soda
• 1/4 tsp baking powder
• 3 tsp cinnamon

Instructions

Preheat oven to 325.  Combine sugar, brown sugar, eggs and oil in a bowl.  Add grated zucchini and vanilla.  Sift together dry ingredients and add to batter.  Stir to combine.  Pour batter into 2 greased loaf pans.  Bake for 1 hour or until knife inserted into center comes out clean.  Remove from loaf pans and cool on cooling rack.
