I’m no vegetarian, but I do enjoy eating a meatless meal every once in a while, especially when my vegetarian sister, (and fellow co-owner of Lime Ricki) Jennifer, comes over for a dinner party. The benefits of a vegetarian diet that motivate me to eat less meat include: maintaining a healthy heart, fitting into my skinny jeans, decreasing my chances of getting cancer, and supporting my love for animals (I love my cute Yorkie, Roxi!). Studies have proven that those who eat meat minimally are overall healthier than those who thrive off of carnivorous diets.
When I make a vegetarian meal, I want everyone in my family to enjoy it not only for the health benefits, but for the tastiness too. Just because a dinner is vegetarian, doesn’t mean it has to be disgusting! Over the years I have found that these five vegetarian recipes are pretty scrumptious, even for us omnivores.
