I’m no vegetarian, but I do enjoy eating a meatless meal every once in a while, especially when my vegetarian sister, (and fellow co-owner of Lime Ricki) Jennifer, comes over for a dinner party. The benefits of a vegetarian diet that motivate me to eat less meat include: maintaining a healthy heart, fitting into my skinny jeans, decreasing my chances of getting cancer, and supporting my love for animals (I love my cute Yorkie, Roxi!). Studies have proven that those who eat meat minimally are overall healthier than those who thrive off of carnivorous diets.

When I make a vegetarian meal, I want everyone in my family to enjoy it not only for the health benefits, but for the tastiness too. Just because a dinner is vegetarian, doesn’t mean it has to be disgusting! Over the years I have found that these five vegetarian recipes are pretty scrumptious, even for us omnivores.5 Vegetarian Recipes that are actually good //

Stuffed Bell Peppers // incredibly filling and hearty – filled with protein, veggies, and healthy grains. Not the mention it’s an absolute stunner on the table

Portabella Veggie Burger // satisfies any craving for a good meaty burger, it’s just a lot healthier. Just add some rosemary or sweet potato fries for a side, and your meal is done!

Lasagna Soup // warms the soul, this soup not only comforts but re-energizes your body after a long day of work and running errands

Grilled Pizza // combination of rich textures and smoky grilled vegetables, this gourmet pizza has my vegetarian sister coming back to my house for leftovers

Tomato Broccoli Pasta Casserole // delectably savory and so easy to switch out and replace existing ingredients with new ones, makes the recipe fresh and reusable

I hope you enjoy these vegetarian dishes as much as my family and I do! While you’re on the prowl for more vegetarian alternatives, try out these carrot fries that I also love!
